I finally tried my hand at making latkes last Sunday. I was hosting Hanukkah dinner for 8 & latkes are mandatory fare. I was terrified, I've never fried anything before. To my pleasant surprise THEY TURNED OUT! They were so good, I shocked myself. I used my salad spinner to dry the shredded potatoes and grated 1 whole onion onto a paper towel. I squeezed the heck out of the juices, using only the lovely onion solids that remained. Dumped all that into a large bowl added 2 eggs, a couple Tbsps matzo meal and salt & pepper to taste and mixed. I used very little oil in my large nonstick saute pan, replenishing it between batches if i needed more. I got the oil very hot and gently plopped small spoonfulls of the potato batter in the hot oil, pressing each one down so it formed a thinish pancake. Flipped it once using a spatula and a fork, and I had myself a platter of golden lovely fragrant latkes. If I can do it, you can do it too!! ;o) There's always next year

My grandmother used to make these, but I come from a long line of Baptists, so I'm pretty sure she substituted something for matzo meal. She never made them often enough to suit me. I'm getting hungry...
