The Good Crunch: Red Cabbage Salad with apples, walnuts and feta

Well Hello, Mr. Cabbage. What are you doing in these parts?

You grabbed me at the farm stand today and, well, you really have to put a blog post up, don't you? Why don't you tell me?

Yeah. Yeah, I guess you’re right.

So yeah. What does one do with a fresh head of red cabbage, then?

a chopped cabbage salad, obviously. Duh.

Good idea. And here’s a recipe for a red cabbage salad with raisins, walnuts and feta from the Perfect Pantry. Only slightly altered, because I didn’t have any raisins. Here’s the recipe:

4 cups shredded or chopped red cabbage (half a head)
1/2 cup chopped walnuts
1/4 cup olive oil
1/4 cup red wine vinegar
2 tsp. Dijon mustard
1/4 tsp. freshly ground pepper
1/4 cup crumbled feta cheese
1/4 cup raisins (I diced a small Gala apple instead)

So you chop up the cabbage and put it in a big bowl. Mix together your olive oil, red wine vinegar, Dijon and pepper together. Throw your walnuts into a dry skillet and toast just until you start to smell them. Throw the vinaigrette onto this and stir for two minutes or until heated through.

You hear me. Stir.

Yes ma'am. Sorry.

Pour this out onto your cabbage and toss. Add your apples, or your raisins, if you can find them.

Don't forget the feta. Because now all the kids will love it even more...

Let this sit for about 15 minutes so the vinaigrette works its magic on the cabbage. It won’t be “cooked,” but it will be easier to chew. Always a good thing, I think.

Gosh, I think you look pretty good. For a head of cabbage. But I have to ask this very obvious and painful question:

Will the kids eat it?

Who cares?

That looks delicious!

I make a pretty good version of a cabbage slaw/salad/something. Thinly sliced cabbage with peanuts, olive oil, lime juice, cherry tomatoes, jalapenos, and cilantro. I didn’t make it up – that’s from 101 cookbooks which you should definitely check out though I’m sure you have. I like this recipe you posted – anything with Feta *has* to be good and I’m always on the lookout for something to do with cabbage! I shall try it this weekend.

That looks great — I especially like the mix of nuts and fruit. We usually go with cooked red cabbage with apples, which the kidlet loves, but that’s more of a winter thing. I like how summery this looks!
