So I’ve been having this little thing with cashew butter.

It’s a fairly new affair. Only a month into it or so. But I find myself completely smitten.

I wake up in the morning and think about it.

I like it sweet. But I’ll happily take it straight up and unadorned.

Even my kids can’t get enough of it.

I blame neighbor Robin for introducing me to my downfall. She’d just roasted some cashews and spun them together with a little grape seed oil in her food processor when she summoned me down to try it.

It was warm. It was sweet. It was so amazingly unlike anything I’d ever put in my mouth before that I cried out in ecstasy before I could catch myself.

Robin chuckled from the other room “Good, isn’t it?”

So good it’s bad. So bad I can think of little else.

Here I must remind you all, gentle readers, that I grew up on Goober PB&J product. I never realized you could make your own peanut butter until I was probably 30. And I never much cared for that taste anyway. But cashews. That’s a different story. I’d seen cashew and almond butters at the store, but I’m never paying attention, and it was literally until this episode that I understood it was possible to make your own butters out of almost any nut. My. God.

Life is good.

Just try these simple cashew nut butter and chocolate chip cookies, and tell me if you don’t feel the same.

Cashew nut butter and chocolate chip cookies:

1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar, packed
one egg
one tsp. vanilla
3/4 cup cashew butter (make your own from raw cashews you roast yourself. It’s worth the effort)
one cup flour
one tsp. baking powder
a pinch of salt
one cup chocolate chips

Cream together butter and sugars until smooth. Add egg and vanilla. Blend again.

Add the cashew butter. Stir vigorously until smooth

Add flour, baking powder, salt in three parts, mix to combine

add the chocolate chips

Drop by the spoonful onto parchment paper and bake in an oven pre-heated to 375, 10-12 minutes. Don’t overcook. They’re supposed to be a little underdone to the touch when you take them out. Let sit on the cookie sheet a minute or two before transferring to a cookie rack.

These will keep for a few days, especially if you put them in Tupperware and hide them from the children.

Deep, dark secret: Cashew butter and bamboo honey sandwiches are a door to the dark side. Seriously, they are AMAZING!
